Mr. Nobuhiku Saisho
Chef of 'Sushi Saisho' in Ginza, Tokyo.
Operates ‘Sushi Saisho’ in Ginza, Tokyo.

His restaurant has become a popular sushi spot due to his use of horse meat from Kumamoto Prefecture, aged meals from Iwate Prefecture, and sushi made with extremely carefully selected dish.

He spends his days making careful selections from among the best of Japanese ingredients, always seeking to get closer to a truly authentic flavor.

“As I serve both beef and horse meat, the sweeter soy sauce made by Hamada goes with these meats very well and is very much enjoyed by my customers.

The sweet soy sauce that is unique to the Kyushu area strikes the perfect balance of flavor, and plays a vital role also when boiling or stewing food.”
